Fish Sandwich FAQs

How Do I Make My Fish Crust Crispy?

To get fish that isn’t breaded but crispy, you can add flour (we like using Wondra) or cornstarch directly to the flesh. But the secret to getting breaded fish crispy is to bread it evenly and pan fry it at a high temperature. (Fish cooked at a lower temperature tends to get greasier). The choice of breadcrumbs also helps – that’s why we suggest using Panko breadcrumbs, which yield a crispier crust.

Do You Put Cheese on a Fish Sandwich?

You certainly can add your choice of cheese to a fish sandwich! Mild cheddar, gouda, or American cheese are good options.

How Much Fish Do You Need for a Fish Sandwich?

One 4-6 oz portion t per sandwich would be our recommendation.

What Condiment Goes with Fish?

Creamy dill tartar sauce is often served on a fish sandwich as a mayo substitute. You can also top with red onion, lettuce and sliced tomato. This fish sandwich recipe uses our chef’s signature pepper jack cheese slaw.

What Goes Well With a Fish Sandwich?

Cole slaw. French fries. Dill pickles. A side salad. Baked beans. Pasta salad or potato salad. These are all common fish sandwich sides!

Ingredients

    Crispy Fish Sandwich

    • 2 4 ounce Flounder fillets or Cod portions patted dry of any excess moisture
    • 2 Bulkie rolls
    • Kosher salt and fresh cracked black pepper, to taste
    • 1 Egg, beaten with 2 tsp. of water
    • ¼ cup All purpose flour
    • 1 cup Panko breadcrumbs
    • 4 tbsp. Vegetable oil

    Pepper Jack Cheese Slaw

    • 1 14-ounce bag Thin cut Cole Slaw cabbage mix
    • 8 ounce Pepperjack cheese grated
    • ½ cup Scallions sliced finely
    • ½ cup Banana peppers drained and diced
    • ½ cup Pimento peppers diced
    • ¾ cup Mayonnaise
    • 2 tbsp. White vinegar

    Instructions

    1. Making this crispy panko fish sandwich is easy. The first step is to mix all slaw ingredients together in a large bowl and allow to chill until ready to use.
    2. Next, pat flounder or cod portions dry with a paper towel. Season with salt and pepper.
    3. One portion at a time, dust with flour, dip and coat with beaten egg, and coat well with panko Crumbs.
    4. Heat 4 tablespoons of vegetable oil in a large skillet over medium-high heat. (Want to make an air-fried fish sandwich? Follow the same breading procedure above and air fry at 375* for 12-15 minutes – otherwise, to pan fry, continue reading).
    5. Flounder fillets should sizzle when placed in the pan. You can also check the temperature by throwing a small sprinkle of cold water into the pan – the amount you’d get when dipping fingers in a bowl of water. If that sizzles, your pan should be hot enough.
    6. Next, pan fry until golden brown on both sides, about 2-3 minutes per side.
    7. Remove the flounder from the pan and wipe clean.
    8. Spread a thin layer of mayo (or butter, if you prefer) on the insides of a split Bulkie roll. Griddle over medium heat until golden brown.
    9. To assemble – spread about a cup of Cole slaw on the bottom half of your roll and top with crispy fish fillet.
    10. Cut the sandwich in half and serve.
